Ayurvedic Eggs

So long as you buy free range eggs from a known source where the hens are genuinely cared for eggs can be a good source of protein, though they are considered ‘heating’ in Ayurveda. This now familiar combination of herbs makes them more digestible—and    delicious.

2 tbsp ghee or coconut oil

1/2 tsp black mustard seeds

1 tsp cumin seeds

1 tsp curry leaves

1/2 tsp turmeric

Salt, a pinch

4 eggs

Melt the ghee or oil in a frying pan. Pop in the     mustard seeds and cover until the heat of the fat makes the seeds pop. Turn the heat low and then add the cumin, stir, then add the other spices and salt. Mix well. 

Break in the eggs and fry to your desired setting, turning once to ensure both sides are golden. 

P – Eggs are inflammatory so eat in moderation-the spices help a lot
